Boring?

My diet is high raw vegan - 90% raw with one cooked meal a day and even that is optional and may be dropped in warmer weather when the craving for cooked food is less. But maybe not - I enjoy cooking and experimenting in the kitchen and there's unlimted ways to serve vegetables, grains (I keep mine limited and unrefined of course) and legumes (mostly lentils).
Here's one -

Above is vegetables lightly sauteed in vegetable broth (sometimes water) with curry and Nutrional Yeast to add a cheese like sauce.


and then the addition of organic vegan BBQ sauce, lentils and quinoa


and finally wrapped in fat free Lavish Flat Bread from Trader Joe's.

Serves four- or just me.

This took me about 15 minutes to prepare and cook and could be done even quicker as I often have my vegetables pre-chopped for an easier meal prep.
This is typical of my last meal of the day although I'll often have a sliced apple sprinkled with cinnamin later in the evening.
I get wild like that sometimes.

Once you are clear of junk foods, additives, and animal products flavor is actually enhanced to truly appreciate the sublte (and bold) taste of fruits and vegetables and there is absolutely nothing boring about the taste, preparation or results from a vegan diet.
